New-generation bread vans: insulated body, side doors for each section, guides for trays. Bread delivery without breakage or drying out.
Bread is carried not by cold but by care: a loaf must not knock against the wall or dry out on the route. The body is therefore isothermal — the panel slows warming and the batch arrives at close to the temperature at which it was loaded — while inside, guides for standard bread trays are fitted. The trays slide into the guides and do not slide around the body, and a gap for air remains between tiers.
The second thing that matters on a route is the doors. A side door per section lets you hand over an order at one stop without opening the whole body, so the rest of the bread neither cools nor dries.
